Grilled Taco Night

Tacos … there are endless combinations. Pretty much any type of food and flavor can be placed on a tortilla and taste delicious. It’s a great meal for anyone. Even the cat wants in on a taco!

This is also a great way to use up what is in your refrigerator. During the summer, I grab everything that can be put on the grill – meats, tofu, fresh veggies. With all of this variety, everyone will be happy (and there will probably be leftovers for quick and easy taco-inspired lunches).

Here, I have blackened chicken, a couple of types of chicken sausages, sweet corn on the cob, pattypan squash, a bell pepper, and grilled kale.

I like to let the vegetables speak for themselves with a light brush of oil, a sprinkle of salt, and some char from the fire.

After everything is cooked and any meats have rested, slice everything up and serve. I kept everything on the baking sheets and put it in the center of the table next to a stack of corn tortillas. Serve with lime wedges, avocado slices, salsa, or whatever your favorite accompaniments are.
