Whole Grain Toast with Ricotta, Nectarine, and Thyme

Did you know that fruit and herbs pair very nicely together? In this case, nectarines pair with thyme for this satisfying breakfast (or snack). And this has been my breakfast almost every day this week.
I had surgery on my foot so I’ve needed to basically sit for the last month, so I apologize for slow rolling out of new posts and recipes. But I’ve slowly started working my way back into the kitchen with a lot of help from both of my sous chefs. I even have a stool set up that is the perfect height to rest my knee on to keep the weight off my foot.
This toast is super simple and comes together in minutes. Plus, you are pretty much hitting all the food groups here – whole grains, dairy, fruit, nuts, leafy greens (which is what I’m counting herbs because they are green and they are leaves), and a bit of sweetness from honey.
The directions below are for 1 slice of toast with the yummy toppings. Feel free to double, triple, etc. to feed all the members of your family (or yourself, absolutely no judgment here!).
Toast a slice of your favorite whole grain bread (or really, almost any bread you have on hand). While your toast is toasting, cut a nectarine (or peach) in half, then into 4 slices. Then, pull the leaves off of a good size sprig of thyme. Fresh basil or mint are also delicious.
When your toast has achieved your desired level of toasty-ness, spread with some ricotta (or even labneh or plain Greek yogurt). Then top with the nectarine slices and sprinkle over the thyme leaves. Add a few pinches of toasted almond slices (or pistachios, hazelnuts, walnuts – whatever you have). Drizzle some honey on top. Finish with a tiny sprinkle of sea salt. Enjoy!
Whole Grain Toast with Ricotta, Nectarine, and Thyme
Ingredients
- 1 slice whole-grain toast
- 2 tbsp ricotta
- ½ nectarine or peach
- 1 sprig thyme
- ½ tbsp sliced toasted almonds
- ½ tsp honey
- pinch sea salt
Instructions
- Put the bread in your toaster. Slice the nectarine half into 4 wedges. Pick the leaves off of the thyme sprig.
- When the toast is ready, spread the ricotta over it and then top with the nectarine slices. Sprinkle the thyme leaves and almond slices over the top.
- Drizzle the honey over the top and finish with a small pinch of sea salt. Enjoy!
